Why We Love It: Fry, Grill, Sauté—the possibilities are endless! Squid must be cooked for either a very short time or a very long time. Anything in between turns it very rubbery. Two minutes over high heat is plenty. Beyond that will require at least 30 minutes to re-tenderize it.

 

Cooking Tip: You can do it! Remove tentacles from tube and trim just below the eyes. Remove the beak from the center of the tentacles. Peel the skin from the tube and remove the quill and wings, wash with water. Slice the tube into rings or keep it whole.
